We have three very similar hotels and we use only one website that has 3 domain alias. That is, this is one joomla installation and one database. Depending on the domain name are used in different texts and photos. For this we use tags. For example, instead of the name of the hotel we insert the text {hoteltitle}, and instead of photos - {hotelphoto1}, {hotelphoto2}, etc.
We are interested in the template "Ocean Theme". Can I use tags in all articles and modules of it?

I'm not sure of what you are trying to achieve. All I can say is that CH extensions are based on Joomla development best practices, so you can do everything you can do with Joomla, but perhaps some custom code would be needed.
That said, why not build one website per hotel? That would be much better for SEO.
